We prepare our handmade fish balls using a traditional slapping technique. This process helps release the myosin proteins in the mackerel, transforming the loose fish mince into a sticky, gelatinous and elastic paste.

The result? Fish balls that are known for their satisfying chewiness, with a balanced savory umami flavor and a subtle oceanic sweetness from the mackerel.
